Seasonings For Fresh Sausage LEM's fresh seasonings are packaged to season 15# of meat. To make smaller quantities, use about 2 teaspoons per pound. Try them for making great sausage patties or links for breakfast. LEM's seasonings make delicious "sausage burgers" that are great for grilling or frying. Also, fresh sausage can be put into casings to make mett-like links for sandwiches. They can be grilled, fried, or boiled.

LEM Natural Hog Casings - 8oz Bag 32-35mm (1-1/4" - 1-1/2") Use these casings for brats, fresh metts, Italian sausage etc. Available in a vacuum sealed bag. A bag stuffs approximately 20-25 lbs of sausage. Rinse casings several times then soak in water 1 hour until pliable. To store - cover with table salt, place in a covered container and refrigerate.

LEM Cure A mixture of salt and sodium nitrite (6.25%). This product should be used to control botulism as well as add color and flavor in your smoked or cooked sausage. The conditions created during the low temperature cooking of sausages and jerky are ideal for the promotion of botulism. This cure will not kill salmonella or E-coli bacteria. Those bacteria are eliminated by proper cooking temperatures. The use of this cure in meat and fish is strictly regulated by the FDA. Follow directions to the letter. DO NOT use more than directed. Normal use is one level 1/4 teaspoon per pound of meat, 1oz to 25lbs of meat or 4oz per 100lbs of meat. Keep out of reach of children. (All Backwoods Seasonings come with premeasured package of cure)
